Sugar 150g

Mascarpone 900g

Lady finger

Espresso

Pistachio paste or any flavouring

  1. Mix egg yolk and 2/3 sugar. Whisk it to nice and smooth
  2. Add mascarpone and whip to mix
  3. Add 1/3 sugar to egg whites and whip meringue
  4. Fold the meringue into the yolk mixture
  5. Add the flavouring optional
  6. In a pan add this mixture one layer and second layer with fingers dipped in espresso and make more layers
  7. Set in fridge minimum 3 hrs or overnight and serve cold
